Slow Cooker Pulled Pork

Ever have a day when you just head to the store and try to figure out dinner while you're there? Yeah, Saturday was that day for me. After poking around the grocery store for what felt like everrrr, I found a bone in pork roast and decided on pulled pork! I did this one a little different than I normally do, I thought I'd share it with you.

Pulled Pork
yields; 8-10 servings 

Pork Roast or Pork Shoulder 
1 bottle Sweet Baby Ray's Sweet 'n Spicy bbq sauce
3/4 cup Light Brown Sugar
Juice from one can of Chunk Pineapple

Dry Rub Ingredients;
a pinch of Salt
1 1/2 tbsp Pepper
1 1/2 tbsp Onion Powder

Add a few squirts of the bbq sauce to the bottom of the crockpot. Next up, add the juice from the can of pineapple and light brown sugar. Add pork roast to crockpot and apply the dry rub (you can do this when the roast is still out of the crockpot, but I'm lazy.) Cook on high for 4 hours or low for 8. About half way thru, I added almost the rest of the bottle of bbq sauce around the roast, avoiding the dry rub top. A 1/2 hour before serving time, take out the roast and shred with two forks. Add the shredded meat back in the crockpot and mix. Serve on potato rolls with coleslaw on top. (totally forget to take a pic of mine with coleslaw...) Like yours to be extra messy? Add some additional bbq sauce. Not a fan of coleslaw? Thinly slice up a granny smith apple, add to sandwich.
